In a saucepan, combine sugar and honey. Heat over low heat, stirring until well mixed. Once the mixture starts to boil, let it simmer for a few more minutes before removing it from the heat.
Whip the egg white and add it to the mixture, stirring gently so it doesn’t set. Put the saucepan on low heat and stir constantly until it has a caramel-like texture. Add the almonds, mix, and let it rest until it is lukewarm.
Line a mold with parchment paper, place a wafer on the bottom, and pour the mixture over it. Place the other wafer on top and let it cool for several hours.
HISTORY OF ALICANTE NOUGAT (TURRON)
The Spanish nougat (turron) dates back to the 15th century in the province of Alicante. A document from Alicante in 1582 mentions that, “from time immemorial, every year during Christmas festivities, the city of Alicante traditionally pays part of the workers’ wages in money and part in a gift of a quarter of a hundredweight of nougat.” Almonds and honey, key ingredients in the nougat, were already widely used in Al-Andalus for various sweets. Today, much of Spain’s confectionery retains this heritage with treats like turron. During the 15th to 17th centuries, nougat was made in Jijona and Alicante. However, under the reign of Carlos II, a dispute arose when Valencia’s pastry guilds, part of the “Colegio de Cera,” sought to regulate Alicante’s nougat makers, aiming to impose their rules on them. Combined with the rising popularity of chocolate, nougat production in Alicante diminished, leaving Jijona—far from Valencia’s guild control—as the primary hub for its production. Today, Spain is the world’s leading producer of nougat, marzipan, and Christmas sweets.
